Super High Gravity Ale Yeast from White Labs originates from England and can handle up to 25% abv! Great yeast to help restart stuck fermentations, especially big beers that typical yeast may stall out ahead of time on. This yeast can ferment up to 25% alcohol when used correctly. It produces ester characters that increase with increasing gravity. Malt character dominates at lower gravities. As with any high-gravity beer, extra oxygenation and yeast nutrition can help this yeast to perform to its fullest potential. To achieve >25% ABV, sugar needs to be fed over the course of the fermentation.

Tips to achieve full attenuation with this yeast:

• Oxygenate your wort with O2
• Add Yeast Nutrients to the wort
• Make a starter - 25% abv requires 3-4 times the amount of yeast than a typical batch.
• Staggered late additions of simple sugars.
